This is a recipe that I created myself to be able to keep on hand as a snack throughout the summer. Simply boil the seeds and nuts, then transfer them to a food processor and mix in some olive oil, salt, and pepper.
You can eat it in many different ways, but my favorite way is to drizzle it over a bowl of steamed broccoli, then top with a bit of goat cheese.
Who knew that reeses balls were actually a health food? Turns out, it’s a really popular snack. It’s basically just a blend of nuts and seeds that gives you a little zing. I grew up eating reeses in my home, but I was always confused at first as to why we’d eat it.
I think this comes from the fact that its an orange/ginger/nut variety, like a nutella. Its not uncommon for people to refer to this as the “raisin” variety, which is also a flavor combination. My favorite way to eat reeses balls is to drizzle a bit of olive oil on a bowl of steamed broccoli, then top with a small bit of goat cheese and a dollop of fresh goat cheese.
The goat cheese is optional, just add it on top of the greens if you’re feeling adventurous.
Not one to miss the chance to eat some reeses balls, I found myself craving them in the first few minutes after they arrived. They seemed to be a perfect way to end my meal without feeling like I had to eat something I didn’t want to, and I got a huge dose of satisfaction knowing that I could eat them whenever I wanted.
This particular recipe is my favorite, and I love goat cheese with any veggie dish. It’s the perfect complement to broccoli.
I’m partial to this recipe because the goat cheese is a little thick, but I think it works equally well as an appetizer and entree. It’s not a particularly light cheese, though, so I think a drizzle of olive oil or tahini sauce with the reeses balls makes a really nice finish. I also like to add bacon bits on top for a little crunch.
