I have been making turkey chops and a gravy for years and it is a perfect way to celebrate Thanksgiving. These little guys are crispy, smoky, and so tender.

I really love turkey right now. I love it in a baked form, but I also love it in the barbecue form. A whole roasted piece of turkey, made with spices and herbs, with a little bit of gravy and that simple but amazing sauce is the perfect way to spend Thanksgiving without spending a lot. Just try it. I made the gravy with the turkey and made a sauce with the gravy and added a little bit of mayo. I also put the turkey on a bed of mashed potatoes and gravy and then drizzled some of the sauce over the top. It was tasty, and as you can see in the pictures, it was a pretty large piece of turkey.
